Why do some Wildgrain sourdough loaves contain yeast?Updated 6 months ago

For a few of our sourdough loaves, we use a little bit of yeast in addition to using a sourdough starter. This creates a more airy crumb, which is helpful for loaves that have inclusions (e.g. dried fruit, nuts, etc.). Loaves with inclusions generally have a more dense crumb, since the inclusions weigh the dough down. So adding a little bit of yeast ensures the crumb remains airy!
