Why are some Wildgrain breads denser than others?Updated a year ago

Some of our breads have a denser crumb (i.e. interior) than others; this can be due to the type of flour or the inclusions (e.g. fruits, nuts) used in the recipe. For example, our Harvest Sourdough Loaf is denser than our Plain Sourdough Loaf because it contains fruits and nuts.

In general, our sourdough breads tend to have a denser crumb than our non-sourdough slow-fermented breads.
